Lemon Pudding Cake

Ingredients:
1 3/4 c. sugar
2 slightly beaten egg yolks
3 T. flour
1 c. milk
3 T. lemon juice
2 egg whites
2 T. butter, melted
Directions:
In a bowl, combine sugar and flour; stir in lemon juice and butter. In a large bowl, combine yolks and milk. Add flour mixture to yolk mixture; stir until just combined. In a small bowl, beat egg whites until soft peaks form; fold into lemon mixture. Transfer batter to a 1-quart casserole dish. Place inside a large pan on oven rack. Add hot water to larger pan to a depth of 1 inch. Bake in a 350 oven for about 40 minutes or until golden and top springs back. Makes 4 servings.
